Ingredients:
1 pound Milanesa beef (If you can't find it, use very thin sliced top round.)
2 eggs
2 cups Italian breadcrumbs
3 cups canola oil
5 torta rolls (If you can't find them, French rolls will also work.)
1/4 cup low fat mayonnaise
2 cups shredded lettuce
1 cup diced tomatoes
1 12 oz. jar pickled jalapenos
Make Dinner:
Heat oil in a large frying pan over medium high heat. Beat eggs in a small mixing bowl. Place breadcrumbs on a large plate. Dredge each thin slice of beef first in beaten egg, then in breadcrumbs. Fry in hot oil 3-4 minutes per side. Remove from oil and drain on paper towels.
To assemble tortas, spread each roll generously with mayonnaise. Top one side with one milanesa. Top the other side with shredded lettuce, diced tomatoes and pickled jalapeno slices to taste. Serve warm.
