Ingredients:
5 bolillo rolls (Any sandwich roll will do.)
1/2 pound sliced deli turkey
1/2 pound sliced mozzarella cheese
3 Roma tomatoes, sliced
Pesto sauce
Homemade Pesto
2 cups loosely packed fresh basil
1/3 cup pine nuts (If you can't find them, use walnuts.)
2 Tbsp. minced garlic
1/2 cup grated parmesan cheese
1/2 cup olive oil
1/2 tsp. salt
1/2 tsp. pepper
Place basil, pine nuts, garlic, parmesan cheese, olive oil, salt and pepper in a food processor or blender. Pulse until smooth, about 30 seconds. Set aside.
Make Dinner:
Preheat panini grill. Slice open each sandwich roll and spread each side generously with Homemade Pesto. Layer each roll with 3 slices turkey breast and 1 slice mozzarella cheese. Top with 2-3 slices of tomato. Close sandwich and place on hot panini press. Grill for 5 minutes until cheese is melted.
