15 minutes prep + 8 hours cook time
Serves 6
Ingredients:
5 pound beef brisket roast
2 tsp. garlic salt
1 medium onion, peeled and roughly chopped
2 21 oz. bottles BBQ sauce
12 slider rolls (We like King’s Hawaiian.)
6 cups purple cabbage, shredded
1 cup lowfat mayonnaise
3 Tbsp. lime juice
2 tsp. salt
1 tsp. black pepper
Make Dinner:
Rub roast with garlic salt. Place in slow cooker. Top with chopped onions. Cover in BBQ sauce. Cook on low heat for 8 hours. When ready to serve, use two forks to gently shred beef.(Chef’s Note: The meat should be very tender and will fall apart easily.)
When ready to serve, combine cabbage, mayo, lime juice, salt and pepper in a medium mixing bowl. Stir well. Serve BBQ brisket in slider rolls topped with lime coleslaw.
