1 found firm white fish fillets (We like cod.)
2 cups flour
2 1/2 cups Italian breadcrumbs
2 cups canola oil
Slice cod fillets into strips, 2-3 inches long and 1/2 inch wide. Place flour in a small mixing bowl. Set aside. In a separate small mixing bowl, beat eggs until smooth. Place breadcrumbs into a third small mixing bowl. Heat oil in a large frying pan over medium high heat. Dip fish into flour, coating thoroughly. Then, dip into beaten egg. Finally, dip fish sticks into bread crumbs. Place into hot oil immediately and fry for 3-4 minutes per side. Remove fish sticks from oil and drain on paper towels. Serve fish sticks with ketchup for dipping if desired.
