Makes 10 kabobs
Ingredients:
3 pounds Sockeye salmon fillets
2 zucchini, sliced 1/8 inch thick
1 large onion, sliced into 1 inch pieces
1/2 cup olive oil
1/4 cup lemon juice
3 tsp. garlic salt
2 Tbsp. dill
10 wooden skewers
Make Dinner:
Preheat oven broiler to high. Combine olive oil, lemon juice, garlic salt and dill in the blender or food processor. Pulse until smooth, about 10 seconds. Slice salmon into 1 1/2 inch x 1 1/2 inch cubes. (Chef's Note: Leave skin on to hold salmon together.) Place sliced zucchini, onion pieces and salmon in a large mixing bowl. Pour olive oil and lemon juice mixture over veggies and salmon. Toss very gently to coat. Thread vegetables and salmon onto wooden skewers. Begin first with a slice of zucchini, then salmon, then onion. Repeat in that order until skewers are full. Place skewers on an oven broiler pan. Broil for 10 minutes until salmon is cooked through.
