Ingredients:
2 pounds pork shoulder roast, cut into 2 inch cubes
2 cups half and half
2 Tbsp. minced garlic
3 tsp. curry powder
2 tsp. cumin
1 Tbsp. garlic salt
1 Tbsp. onion powder
1 tsp. black pepper
10 wooden skewers
Cooking Spray
Spicy Peanut Sauce (Recipe below)
Sticky Rice (Recipe below)
Make Dinner:
Preheat oven Broiler to High. Place half and half, garlic, curry, cumin, garlic salt, onion powder, and pepper in a large mixing bowl. Mix well. Add chopped pork and marinate for 15 minutes. While pork is marinating, soak skewers in water to prevent them from burning when cooking. When marinating is complete, thread pork onto wooden skewers, about 5-6 pieces per skewer. Place pork on broiler pan and place under broiler for 15-20 minutes until pork is cooked through and golden brown. (Turn skewers halfway through cooking time.)
While pork is cooking, make Spicy Peanut Sauce and Sticky Rice.
Spicy Peanut Sauce
2/3 cup peanut butter (We like Adam's Natural)
2/3 cup warm water
1 Tbsp. minced garlic
1/4 cup lime juice
1/4 cup soy sauce
3 tsp. chili powder
1 tsp. honey
Cooking spray
Spray 1/3 cup measuring cup with cooking spray. Use measuring cup to scoop 2/3 cup peanut butter and place into blender. (Chef's Note: The cooking spray will ensure the peanut butter doesn't stick to the measuring cup.) Add water, garlic, lime juice, soy sauce, chili powder, and honey to blender. Pulse until creamy, about 10 seconds. Serve Spicy Peanut Sauce as a dipping sauce for pork satay.
Sticky Rice
2 cups rice
4 cups water
2 Tbsp. rice wine vinegar (If all you have is plain white vinegar, use it. It will work.)
Place rice, water and vinegar in saucepan. Bring to a boil over medium high heat. As soon as rice boils, reduce heat to low. Simmer for 20 minutes. Serve immediately.
